What pirate doesn’t love a good garlic knot? Moving to the south has had it’s adjustments, one of them being trying to find a good pizza place. Of course we have the chains, but there is nothing like a good slice of pie and all the sides that comes with a pizza. So I have started making pizza at home. It’s easy, cost effective, and the crew eats it. Arrrr!!!! So the following is the recipe for the pizza dough, which can be used for many things, including garlic knots.
(This should be going on the Recipe Page, but I’m having an issue remembering how to get a draft on a certain page. I have no brain.)
Pizza Dough
2 3/4 – 3 1/4 cups of all purpose flour
1 package of dry active yeast
1 cup of warm water
2 tablespoons oil
Combine half of the flour with the yeast. Add 1/4 teaspoon of salt if you want. Add the warm water and oil. Mix/beat. Then add the rest of the flour gradually. It should form a nice stretchy dough. Turn onto a floured surface and give it a good knead for five to ten minutes.
For Knots: pull off sections and roll them into a length that you can tie a nice knot. Maybe seven inches long. Then Make a mixture of pressed garlic, garlic powder, salt, pepper, parseley, and oil for the dressing. You have to really cover the knots with the sauce so they don’t get dried out while baking. I fit 23 good sized knots on a cookie sheet and baked at 375 for 15 minutes. The are yummy and could be eating all by themselves.

Sounds yummy. I might, on some rainy afternoon when I don’t mind the oven being on, make these with my own pirate crew. I imagine it would be quite a hit. Any hints for measurements for the garlic sauce?
Thank you!

I pressed four sections of garlic into about three to four tablespoons of cooking oil. Maybe a teaspoon of garlic powder/salt, which ever you prefer. I spooned on the sauce, but I think brushing it on or even rolling the knots around in it will work better the next time I do it.
