Recipes: Quick and Easy as Possible
I am a mom of two, working on my first husband.
I stay at home for a couple of reasons. (Check out my MOM page.) Anyway, with a limited income we try to make our dollar stretch. So I’m going to share my simple, inexpensive for the most part, recipes and meal ideas. We’ve been trying to eat better and thus, some may tend to be on the healthy side. You can always get more fat or calories if you want, that’s why I’ve added desserts too.
Take as many chicken breasts as there are members of your family and trim of the fat. I get the boneless, skinless, frozen chicken breast so the trimming is rather easy. Depending on the thickness of the breast, you can decide to fillet it or not. Add some water to a large frying pan and place chicken inside. I add a little pepper, salt, and a generic Italian seasoning to the chicken. Let the chicken simmer on a medium light for about seven minutes; then flip and add seasonings if desired. I do. Depending on how hot a medium light is on your stove top, you may have to add more water so as not to burn the chicken. Cook time for the chicken shouldn’t be any longer than fifteen minutes. Then you have the option of serving the chicken hot or cold on a bed of you favorite leafy vegtable. I love baby spinach so I buy the prepackage bag when it is discounted. (Usually this means you have to use it in a day or two.) Cut the chicken into slices and place on top of the lettuce/spinach. Then slice up a tomatoe, carrot, add some olives and your ready to go. Add a dressing if you like. Enjoy!
Turkey Meatballs (Turkey Loaf)
OK here again is a healthy version of a classic. At least I think so.

ground turkey meat

one egg

Italian dressing
-
bread crumbs, Italian Sesoning or

Onion soup mix for a savory taste
In large bowl, combine all ingredients. I usuall leave the bread crumbs till last so I can see if I need to add more dressing or not. Once the mixture has come together, roll into your favorite meatball size. Since we have little ones, we tend to make them on the smaller side. Place your meatballs in a caserole dish and add either water or more dressing. I use water. Then cover with aluminum foil and bake at 350 degrees for 15 minutes. After the first 15 minutes, remove foil and bake for an additional 12-15 minutes. Serve as you would regular meatballs, with spaghetti, or make a hero sandwhich.
You can also use this for a meatloaf, we call it Turkey Loaf, rightly.
